Since we live in Idaho, potatoes are something we can always get cheap or free. This week they are on sale at Albertsons, 10lbs for $.99! Talk about cheap food. Here is one of my favorite recipe ideas for potatoes.
Cheesy Potatoes
Bake 9 medium potatoes with skins on aprox. 40 min. (cool & cube)
Bring to a boil. Take off heat.
Then add: 16 oz. sour cream, 1 1/2 c. grated sharp cheddar cheese, 1/2c. chopped onions, and blend until soup.
Pour over potatoes. Put in 13×9 buttered pan. Crush ritz crackers on top with sliced butter (aprox 1/2 cube)
Bake at 350 for 45 min.
