We like to eat Yellow Squash and Zucchini a lot at our house. I have tried many ways and like this the best.
Wash and cut your squash/zucchini in half. I then like to spray with butter and salt and pepper both sides. I then stick it in the microwave and cook it for a minute or two, depending on the size. **Be sure not to cook it too long or it will be too soggy! Sometimes I will add sliced cheese on the top to add a little flavor. Now you have a delicious vegetable side dish to eat! Enjoy!
