Crispy Waffles

These are so yummy! I am a waffle lover and found this recipe to have the best taste and texture. The folded in egg whites help the waffles have a crunch on the outside while remaining crunch in the inside. Enjoy! 

Crispy Waffles
2 cups flour
2 tablespoons sugar
3 teaspoons baking powder
1/4 cup oil
1 teaspoon salt
2 eggs
1 1/4 cup milk

Mix dry ingredients in a medium sized bowl. Separate egg white from yolk and put the whites in a  bowl.  Put the yolk in the dry ingredients bowl.  Add the rest of the wet ingredients into the dry ingredients and mix well. Beat the egg whites on high until light and fluffy. Fold the egg whites into the mixture. Cook on a Waffle Iron. Makes about 3-four large pieced waffles.

Hint:  Unlike pancakes, I find the waffles taste better if I cook them all the day I make them and then freeze them. When I’m ready to eat the frozen waffles I pull them out, and microwave or toast. I prefer toasting, because the microwave makes them a little more soggy.  I like to make my own syrup too-recipe coming next Monday!

Hi! I am just a random blogstalker, but I love your blog. Thanks for sharing your great recipes. I am a waffle lover too. I just wanted to pass on that when I make waffles from scratch, a little vanilla gives it a yummy flavor too. I can't wait to try these. :)
