Twice Baked Potatoes

One of my favorite ways to eat potatoes is Twice Baked Potatoes. This is a fantastic recipe to prepare ahead for those meals like Valentines Day where you want to spend the day with your sweetheart!

Twice Baked Potatoes
Potatoes 
Sour Cream
Butter
Garlic & Onion Seasoning
Pepper
Cheese

First you want to scrub and wash the potatoes. The larger the potato, the easier it will be to work with. After you wash them, bake them in a 350 degree oven for about an hour-less time if they are small potatoes. Do not cover them in foil and be sure you jab each potato with a fork several times. This will prevent them from bursting inside your oven.

Once they are baked, when you insert a fork it will slide in easily through the potato, pull them out of the oven to cool for a few mintues. Now it’s time to gut the potatoes. Take a knife and cut an oval shape around the top of the potato. Take the cut skin off and throw it away. Use a small spoon and scoop the potato insides from skins and put them into a separate bowl. Be very gentle with the skins so that you don’t tear them.

Next you will add the ingredients into the bowl: sour cream, butter, seasonings. I don’t use a recipe for this I just add a spoonful here and there until the potatoes taste the way I like them. For the four large potatoes pictured above, I used about 1/4 cup butter and 1/3 cup sour cream. I like to use garlic pepper, onion, and a no salt seasoning to add extra flavor. Use whatever you like to add your favorite taste. Now use a potato masher or mixer and blend all ingredients together well. I personally like to use the masher, but other people like the lighter-fluffy texture from using a mixer.

Once the potatoes are mixed to the taste you like, scoop the bowl mixture back into the skins.  If you plan to eat them right away bake them for about 20 more mintues. You may also refrigerate them, up to three days, until ready for use. If you choose to refrigerate them a day or two they will need to cook for about a hour until warmed throughly. I like to sprinkle cheese on the top for the last few mintues of cooking.
