Sharing Recipes

THANK YOU Holly for the excellent Egg Plant recipe! In an effort to add more vegetable variety to our dinner table I bought two Egg Plants on manager’s special for $1.00 at Kroger. I followed the recipe below, thanks to Memphian and Couponer Holly, and was pleasantly surprised by the delicious taste! I will certainly be buying more Egg Plants!

Peel the egg plant. Slice the eggplant about a quarter of an inch thick or even thinner if you can do it, lay them on a lightly greased (pam) cookie sheet (with sides)and cover each slice with a little mayo or miracle whip. Sprinkle with garlic powder and whatever shredded cheese you have on hand. I prefer the harder cheeses but if I have cheddar then i use that too. Bake at 350 until the cheese melts and starts to brown. The thinner the slice the less it cooks. My hubbie loves this and we have served it for friends and family that don’t “like” egg plant and everyone ends up going back for seconds.

I am also looking for recipes for Artichokes and Whole Wheat Bread. I bought the artichokes at the same time as the Egg Plant on manager’s special. I’ve never cooked Artichokes so I’m excited to try them.

I have tried many Whole Wheat Bread recipes and still haven’t found the best one for me. Maybe I just need some baking instructions too! Anyhow, I’m on the hunt for a good Whole Wheat Bread recipe.
