We love pizza at our house! I make it at least once a month and each time I make it I freeze a pizza so that’s pizza twice a month. I am not a huge fan of the tomato based sauce so I made up my own Ranch Parmesan sauce that I like to use, see the recipe below.
1/2 cup milk
3 tablespoons sugar
2 teaspoons salt
3 tablespoons butter or margarine
1 1/2 cup warm water
1 tablesppons yeast
5 1/2 cup flour
Scald milk, add sugar, salt, butter and cool. Dissolve yeast in water then add milk mixture. Add 1/2 the flour beat until smooth, Add remaining flour to make a soft dough-do not add too much flour or it will be really tough! Knead until smooth and elastic, or mix with a bread hook for about 5 mintues. Cover and let rise one hour. Punch down and spit into two balls. Roll the dough out to the size pizza desired. Bake at 400 degrees for about 7 minutes or until the top and bottom are a very light brown. This recipe makes two large pizzas.
Freezing Pizza
As I mentioned earlier I make two pizzas at a time with the recipe, we usually eat one and I freeze the other one for a quick dinner idea. If you plan on freezing a pizza bake it for seven minutes as stated above, add the toppings, cover it well with plastic wrap, and stick it in the freezer.When you’re ready to eat it pull it out and bake it until the cheese is melted, about 20 to 30 mintues.
After the dough is baked for about seven mintues it’s ready to top. I like to make two different kind of sauces. One is a tomato based the other is ranch based.
Tomato Sauce:
2 small cans tomato sauce
1 small can tomato paste
Italian seasoning (I’m not big on seasoning but you can add whatever you like to make this your kind of pizza)
Ranch Sauce:
2 tablespoons Ranch Dressing
2 tablespoons Parmesan cheese
Parmesan Chicken Pizza
I’ve never had a recipe for this I just throw stuff together. I like to use the Ranch sauce recipe, mix the two ingredients together and spread it on the pizza. Next, I top the pizza with Mozzerella cheese about 3 cups, I then add chicken or turkey meat whichever I might have. I especially like to use leftover Chicken that was barbecued on the grill. I happen to love mushrooms so I add some of these too. I absolutely love this kind of pizza!
Personal Pan Pizzas
My kids all have different taste so I like to make them their own personal pan pizza. I roll the dough out into individual pizza sizes the they top it the way they like it. It keeps everyone happy this way and it’s a fun way to get the kids involved with cooking.
