As I posted last week, I spent two days baking for a Boy Scott fundraiser. Here is the list with recipes too!
Yellow Cake
1 box Yellow Cake mix
1 cups sour cream
1/3 vegetable oil
1/4 cup waer
1/4 sugar
4 large eggs
1 teaspoon vanilla extract
Prepare cake pan(s), this cake cooks well in a bunt pan, but be sure to spray with oil and flour well. Place the cake mix, sour cream, oil, water, sugar eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. Pour batter into prepared pan(s) and smooth the top.
Bake cake until it’s golden brown and springs back when lightly pressed with your finger, 50 to 55 minutes. Once baked, remove from oven and place on rack to cool for 20 minutes. Run a long sharp knife around the edge of the cake and invert it onto a wire rack. Allow the cake to cool about 30 minutes before frosting.
Preheat oven to 350 degrees. Prepare two 9-inch round cake pans, see how I use wax paper here. Mix flour, cocoa, baking soda, and salt. In another bowl, beat butter, granulated sugar, and brown sugar at medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add vanilla.
At low speed, alternately beat flour mixture and butter milk into butter mixture just until blended. Divide batter equally between prepared pans. Bake cakes until a toothpick inserted in center comes out clean, 25 to 30 minutes. Transfer pans to wire racks to cool for 10 minutes. Turn out onto racks, remove paper, Turn layers top-side up to cool completely.
Frosting
This time I had some chocolate frosting that I got for FREE with coupons that I used. I usually make this recipe though.
1/2 cup butter, softened
1 1/2 cups powder sugar
3 ounces (3 squares unsweetened chocolate)
2 teaspoons vanillla
To prepare frosting beat buttter and powder sugar at medium speed until light and fluffy. Add melted chocolate and vanilla; continue beating until shiny and smooth.
Filling
Once again I was able to use FREE cans I had gotten using coupons. I have to say it was much easier and less expensive doing it this way!
1 large can evaporated milk 1 cup sugar
3 egg yolks 2 small packages coconut
1 stick margarine 1-3 cups pecans
Mix milk, beaten egg yolks, sugar, and margarine and cook until thick on medium heat. After cooled add coconut and nuts.
When cake is completely cooled frost one top and add a layer of filling. Stack the second cake layer on top and frost the entire cake. Add filling to the top of the cake.

Wow girl!!! That german chocolate cake is BEAUTIFUL!!! I betcha the boy scouts got a lot for that one! Gorgeous!
