This weekend I made a batch of breakfast burritos to put in the freezer to add some variety to our breakfasts over the next few weeks. I have seen several bloggers post about freezing and reheating breakfast burritos, so we decided to give it a shot. We ate some this morning, and I took a poll- success!
Ingredients:
1 lb sausage
1 dozen eggs
2 medium potatoes grated & cooked as hash browns
Onions (I used to season hash browns)
1 cup Grated Cheese
12-15 Burrito Style Tortillas
(we used taco size tortillas & it was hard to wrap them very well)
Cook sausage, scramble eggs, and cook & season hash browns.
Place eggs, hashbrowns, sausage, and cheese on each tortilla & fold burrito style. Then wrap with plastic wrap. We were able to fit ours in small snack size ziploc bags. Then we placed them all in a big freezer bag to freeze.
Reheating Instructions:
Remove from wrapping & microwave for .75 min. Turn over & heat another .75 min or until thawed and warm. As they thaw, water/liquids can pool at the bottom of the burrito. Turning the burrito cures that. A reader also informed me that you can wrap them in a paper towel to microwave them.
