My family loves this cake. I like to make it after dinner and have it for a bedtime snack then for breakfast in the morning. The great thing about this cake is that you can use any kind of fruit puree you have on hand, although applesauce is my favorite. You can also use 100% whole wheat and honey to make it extra healthy. I usually add one cup white and 1 cup wheat flour when I make it.
Combine oil, sugar or honey, applesauce, flour, salt, soda, cinnamon, cloves, and nutmeg in bowl mix on medium speed for 3 to 4 minutes. Stir in raisins. Pour into lightly greased 9×13 inch pan. Bade at 350 about 25 to 30 minutes. Cool slightly and top with burnt frosting.
Burnt Frosting
Melt 1/2 cup butter or margarine in pan until brown. Burnt butter is pictured on the right.
Add about 1 cup powdered sugar or until thick, add 1/2 teaspoon vanilla and milk. Frost immediately-it will harden. Enjoy!
