Can I just tell you how much I LOVE freezer dinners! It’s so nice to be able to pop something in the oven spur of the moment if things don’t quite go as planned. I have several dishes that I like to make and put in the freezer and also parts of dishes like meatballs, and cheese shells. I will be sharing them with you the next few weeks as I make loads of freezer dinners in preparation for January as our fourth child comes along.
Yesterday I was able to find some Cottage Cheese (50 cents lb.) and eggs (50 cents a dozen) on manager’s special at Kroger so I made a bunch of Cheese Shells and Lasagna dinners. I also made a huge batch of butterhorn rolls.
Stuffed Cheese Shells
1. Mix 8 cups cottage cheese
5 cups mozzarella cheese
2 ¼ cups parmesan cheese
2 ¼ t. Oregano
1 ¼ t. salt
1 t. pepper
9 eggs
2. Spoon 2T. mixture into cooked shells.
Makes about 40 shells. Baking Instructions: Spoon spaghetti sauce to cover the bottom of casserole dish. Place shells in the dish. Cover shells with remaining sauce. I sometimes add diced, or fresh tomatoes, and cooked hamburger as well. Bake at 350 for 25 minutes. If frozen bake for 40 – 50 minutes.
Lasagna
I made a little extra of the cheese shell mixture and used it to make Lasagna. I also used 4 cans of diced tomatoes, 1 can tomato sauce with some hamburger and Italian seasoning. I like to make the no-boil recipe so I layered these all together sauce, noodles, cheese mixture, noodles, sauce and topped with cheese. I will cook this a little longer than than normal as the noodles aren’t cooked yet.
I ended up with 4 bags of Cheese shells which will be about 8 to 9 dinners, 2 Lasagna, and several dozen Butterhorn rolls (recipe coming soon!).

Lasagna is really a great freezer dinner, good idea. And I have to say, you're really one good Mommy, I mean preparing everything like that for the baby's arrival. Which is really practical since your hands will be full by then, you're really sweet. I'm looking forward to your other freezer dinner ideas here.
