Honey Whole Wheat Bread

Ever since I bought my wheat grinder I’ve had a hard time finding a recipe that makes soft, delicious whole wheat bread, in the mid-south. I’m from out west and I feel the humidity has a huge effect on the way the bread turns out. I did some reading and adjusted my favorite recipe a bit to compensate for extra humidity. Here’s my favorite whole wheat bread recipe.

Honey Whole Wheat Bread
(makes 3 loaves)

3 cup warm water
3 Tablespoon milk
3 teaspoon salt
6 Tablespoon brown sugar
6 Tablespoon oil or softened butter
6 Tablespoons honey
9 cups whole wheat flour (I use hard white wheat)
4 teaspoons yeast
3 Tablespoons Dough Enhancer

Add yeast and water plus 1 teaspoon white sugar to mixer and let sit about 10 minutes. Add the rest of the ingredients BUT only half the flour, mix well.

Let the dough sit for 10 minutes to sponge, see the bubbles above. Then add remaining flour or until the dough leaves the sides of bowl.

 

Set on buttered counter or leave in the bowl and rise until doubled.

 

Punch down, shape, and put into bread pans. Rise until doubled then bake on 350 degrees for about 30 minutes or until brown on top. Enjoy!

My daughter uses Prairie Gold hard white wheat and it makes a very nice loaf. She doesn't use dough enhancer as Prairie Gold has a higher gluten content. The humidity surely makes a different–we watch the weather for good bread baking days.

What is dough enhancer and where do you get it?

Dough Enhancer helps the whole wheat bread light, fluffy and it also helps preserves the bread.

Here is a recipe for homemade enhancer so you can see what's in it:

1 cup wheat gluten
2 tablespoons lecithin granules
1 teaspoon ascorbic acid crystals
2 tablespoons powdered pectin
2 tablespoons unflavored gelatin
1/2 cup nonfat dry milk
1 teaspoon powdered ginger

You can purchase this at specialty food stores, some grocery stores, and amazon. I recently purchased mine from beprepared.com.
