Hawaiian Haystacks

When I included this on my menu plan last week, I was informed that many people are not familiar with Hawaiian Haystacks.  This is one of our family favorites.  It is simple, quick, and we usually have the ingredients on hand.  Here is the recipe:

Chicken Gravy:
1 lb Chicken
2 cans Cream of Chicken Soup
1/2 cup Sour Cream
1 cup milk

Toppings:
3 cups rice, cooked
(You can use as many or few toppings as you like.  Ours vary depending on what we have in the pantry)
Chow Mien Noodles
Celery
Cheese
Coconut
Mandarin Oranges
Olives
Pineapple

Directions:
Start the rice.  While the rice is cooking,  make the gravy & prepare the toppings.  I season the chicken with onion, garlic, and pepper.

Then add the cream of chicken, sour cream, and milk to make a chicken gravey.  (Note: the gravy can also be made with turkey.  This is a great way to use your left over Thanksgiving turkey.)

Let sit on low while you prepare the toppings.

Serve family style.  Let everyone create their own “haystack” starting with rice & gravy and adding the toppings they like.

This looks so yummy and fun! We use to serve this at Bunko!
