Thursday I will be dedicating part of my day to freezer cooking. My goal is to make a few breakfasts, lunches, and dinners that I can pull out on busy days.
I usually have left overs or a quick salad or sandwich for lunch. A few freezer meals will give some variety to my lunch without taking time out of my day.
I am hoping to start in the morning and have everything done & the kitchen clean before Daniel gets home at 4:00. Here is what I plan to make:
Breakfast:
Pumpkin Pancakes
Whole Wheat Pancakes
French Toast Caserol (a new recipe I am trying)
Lunch
Chimichangas
Chicken Bacon Bites (a new favorite!)
Dinners
Lasagna (x2)
Personal Pan Pizza
Baked Chicken Penne (a new recipe I am trying)
Snacks/ Other
Pumpkin Muffins
Apple Streusel Muffins (a new recipe I am trying)
Refried Beans
Pita Pockets
Yup- that sounds like a lot, we will see if I am able to get it all done. It will be so nice to have a freezer full of snacks and meals. Thursday I will be posting recipes & updates as I go.
