Chicken Bacon Bites

This is one of my new favorite recipes. I tried it out a few weeks ago, and it was a big hit.  I have been looking for ideas for quick, easy lunches.  This one definately made the list.
Ingredients:

1 batch homemade pizza dough (1 roll refrigerated)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon parsley
1/8 cup grated cheese
1 Tablespoon olive oil or melted butter
1/2 cup diced cheese chunks
8 slices bacon cooked & crumbled
1 cup shreded, cooked chicken

Directions:

Mix up dough & let rise

Cook chicken & cut into small pieces

Bake bacon & crumble.
Cut up cheese chunks
Roll dough out into a square (you want it pretty thin).  Cut into small squares (around 24).
Divide cheese, bacon, & chicken evenly on squares.

Fold up corners to form a ball.  Place on a cookie sheet to flash freeze.  Once hard, place in freezer bag.

 

To Cook:
Place bites in a greesed muffin tin.

Mix onion powder, garlic powder, parsley, and grated cheese.  Spread olive oil or butter on top of bites, then sprinkle spice & cheese mixture

Bake @ 350 for 8-10 min. or until golden brown.  Serve with ranch dressing dip.
