These turned out stickier than I thought, but they taste great.
Ingredients:
Streusel Topping:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter
Combine flour, sugar, baking powder, baking soda and salt. In another bowl, mix eggs, butter and vanilla. Mix wet & dry ingredients to make a batter (it will be stiff). Fold in apples.
Fill greased or paper-lined muffin cups three-fourths full. In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.
Bake at 375° for 15-20 minutes or until toothpick comes out clean. Cool on a wire rack to cool completely. Makes about 1 dozen.
This is the first time I have tried this recipe. I will let you know how it freezes.

Can you used dried Apple pieces from food storage?
I think that dried apples would work great, but I have not tried that. I would just soak the dried apples in warm water for a few minutes until they are soft. Then use them like regular apples. Let me know how it turns out!
