My Grandma Brown is a great cook. One of my favorite parts of visiting Grandma’s every summer was her delicious rolls. Of course, I have not been able to make them taste quite as delicious as hers, but this is a great whole wheat roll recipe!
Grandma Brown’s Two Hour Buns
Ingredients:
3 cups warm water
2 tablespoons yeast
1/2 cup sugar
2 eggs
3/4 cup flax seed ground (I grind it in the blender)
1 1/2 teaspoon salt
8 cups whole wheat flour
Directions:
In a bowl dissolve yeast in water with sugar. Let set a few minutes. Add eggs, salt, and flax. Mix well.
Add flour to yeast mixture one cup at a time, mixing well after each cup. (You don’t want your dough to be too stiff, that is why you only add 1 cup at a time. You don’t have to add all the flour if the dough is a good consistency without it). Knead after each addition.
Let dough rise to double, then punch down and let it rise to double again. (The rolls are more fluffy if you let the dough rise twice – and we love fluffy rolls!)
Form dough into balls (I do mine just bigger than a golf ball) and place them on a greased baking sheet. Let rise to double.
Bake at 350 degrees for 10 – 15 min. Makes approx. 3 dozen
Bread Machine Option:
I like to mix these in my bread machine for two reasons:
First – I am not always patient enough to let my dough rise enough. The bread machine does it for me so that the rolls are fluffy.
Second – It is easy to put everything in the machine and come back an hour and a half later to form the rolls.
I half the recipe so that the dough will fit. I put the water, yeast and sugar in the machine and let them sit for 5 minutes. Then add the rest of the ingredients and mix it on the dough setting. The bread machine allows the dough to rise really well, so the rolls turn out fluffy. Once the dough is done, form the rolls and let them rise.
