Here is another zucchini recipe for you. Growing up this was by far my favorite way to eat zucchini. I love my sweets, oh yes I do!
Ingredients:
1 1/4 cups oil
1 teaspoon vanilla
1/2 cup buttermilk (or milk with 1 tsp. of vinegar or lemon juice added)
2 eggs
5 tablespoons cocoa powder
1/2 teaspoon salt
3 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups pureed zucchini
1 cup chocolate chips
Directions:
Place wet ingredients in blender. Add zucchini chunks and grate until it measures 4 cups (2 additional cups). Or you can just grate the zucchini and add it to the wet ingredients. I think using the blender is easier.
In separate bowl, mix together dry ingredients. Combine wet & dry ingredients. Place in a 9×13 pan and sprinkle with 1 cup chocolate chips.
Bake for 40-45 min. @ 350 degrees.
