This is one of our favorite ways to eat fresh produce. It is filling enough that we can eat it for a main dish for lunch or dinner. If we eat it for dinner, I usually add grilled chicken.
Ingredients:
1 lb cooked pasta (I like to use Garden Delight Rotini)
1 tomato diced
1 head of broccoli cut in bite size pieces
1/2 cup of cheese cut in chunks or grated
2 small green onions cut in bite size pieces
2 carrots diced
1 cucumber diced
1 large grilled chicken breast (optional)
1/4 cup Italian dressing (to taste)
Directions:
Start water boiling & cook pasta. While pasta is cooking, cut up vegetables and cheese and place in a large bowl.
Drain pasta and rinse with cold water. Mix pasta with vegetables. Add Italian dressing. Serve as a side or main dish.
