Our New Diet: Eating Superfoods!

My husband and I have decided to try to eliminate more carbs in our diet and stick to fresh superfoods. We certainly aren’t going extreme but it will be change from the way we’ve been eating. We are hoping our bodies thank us for eating this way!

I went out shopping today to purchase our much needed protein, fruit, and vegetable items. My fridge is overflowing! I might have bought too much:-)  It seems like it’s going to be more expensive now but I’m hoping to be able to continue to stick to our $350 a month budget although it might not happen this month.

This menu is from Monday to Sunday for a family of 2 adults and four boys ranging in ages 8 to 1. Most of the dinner meals I haven’t tried before so if they are successful I’ll be sharing the recipe with you.  If you have any low-carb meal suggestions I’d love for you to comment below!

Breakfast

Cream of Wheat & Blueberries
Whole Wheat Cinnamon Toast & Fruit Smoothie
Oatmeal & Strawberries
Vegetable Quiche
Cereal & Hot Chocolate
Whole Wheat Pancakes & Blueberries
German Pancakes (we’re trying a low-carb recipe this time) & Oranges
Scrambled Eggs & Bacon

Lunch

Pasta Vegetable Salad
Chicken Salad
Egg Salad
PB & Honey/Jam Sandwiches (kids lunches)
Turkey Sandwiches (kids lunches)
Leftovers

Dinner

Salmon, Aspargaus, Butternut Squash Soup
Olive Garden’s Gnocchi Soup (we’re attempting to copy this delicious soup!), Breadsticks, Shrimp & Fruit Salad, Broccoli
Chef Salad (beans, eggs, carrots, tomatoes, bell peppers, avocado, cheese)
Shrimp Stir Fry
Pork Tenderloin, Aspargaus, Lentils
Grilled Chicken and Spinach Salad
Roast, Mashed Potatoes, Green Beans, Salad

Snacks

Trail Mix
Apples & PB
Pears
Oranges
Carrots
Almonds
Pistachios
Yogurt & Homeade Granola
Tomato & String Cheese
Popcorn
Frozen Yogurt
Gingersnaps
No-Bake Cookies
Chocolate Milk
Protein Bar

Menu Plan

Last week turned out to be another crazy week!  I work from home as a structural drafter, and this time of year is very busy.  I did not cross a lot off of my to-do lists last week.  We will see if this week turns out any different!

 

Dinner
I typically serve dinner with a bread or rolls and a vegetable.  I am super excited to be picking up my chicken breast ($1.49 per lb!) next Monday (Idaho, Memphis readers will be able to order this week).  I plan to do a lot of prep work with the chicken next Monday before I freeze it to save me time down the road.

Monday- Homemade Hawaiian Pizza
Tuesday - Venison Roast & Mashed Potatoes
Wednesday- Shepard’s Pie (using left over roast)
Thursday – Chicken Noodle Soup (the real stuff, last week I went with the quick version)
Friday- Grilled Salmon & Rice
Saturday- Chicken & Rice Bake
Sunday- BBQ Pork Spare Ribs (Looking for a new recipe, any suggestions?)

Lunch Snacks
We stick to a simple lunch.  I generally eat leftovers or a PB&J (Yum!).  Daniel takes a simple deli sandwich and snacks.  
Zucchini Bread Muffins (from freezer)
Freezer Chocolate Chip Cookies
Carrot sticks
String cheese

To Freeze This Week:
Each week I try to add a few things to the freezer.  If I do this, I always have a few meals in the freezer for a quick lunch or dinner.

Apple Muffins (recipe to come!)
Apple Pie
(Still have not made this, sorry!  Hopefully I will be able to squeeze it in this week.)
Chicken Noodle Soup (Love freezing this to have for a quick meal)

I am so excited to have fresh Idaho potatoes again!  We are able to get them for free from the fields this time of year.

Monday- Parmesan Chicken & Spagetti
Tuesday - Homemade Pizza
Wednesday- Chicken Enchiladas (From the Freezer)
Thursday – Chicken Noodle Soup
Friday- Steak & Twice Baked Potatoes (Never did this last week)
Saturday- Hawaiian Haystacks
Sunday- BBQ Pork Spare Ribs (Looking for a new recipe, any suggestions?)

Menu Plan

Good news – last weekend we submitted Daniel’s vet school application. (*Huge sigh of relief*) The application opens in June and was due today.  It has been a long proccess, but we turned it in and are now patiently waiting for results.
Helping Daniel with his application took up a lot of my spare time last week, so I did not finish a few of my typical posts.  I will be back on track this week.  I have a bunch of fun, frugal seasonal decorating ideas I plan to post, so stay tuned!

Monday- Chicken Pita  Wraps (I bought a package of pitas marked down to $.99!)
Tuesday – Steamed Red Potatoes & BBQ Pork
Wednesday- Zucchini Fajitas
Thursday- Cheese Shells
Friday- BBQ Chicken Braid (This was a hit!  I froze 3 last week)
Saturday- Lasagna
Sunday- Chicken & Rice

Freezer Cooking
I try to  add something to the freezer each week.  These are usually quick snacks or meals for busy days.  I can usually just double a recipe I am already making and freeze enough for 2 or 3 meals for us.

Zucchini Bread Muffins
Cheese shells
(I will make extra to freeze)
Lasagna
Homemade baking mix (I am excited to try this recipe.  I love using whole wheat, and I am hoping this will make it more convenient)
